Ingredients

2 cups heavy cream
1 vanilla bean
5 egg yolks
½ cup sugar
2 tbsp sugar for topping

Preparation

Step 1

Heat heavy cream with vanilla bean seeds and pod until just simmering. Remove pod.

Step 2

Whisk egg yolks with sugar until pale. Slowly temper in the hot cream.

Step 3

Strain custard into ramekins. Place in a baking dish and pour hot water halfway up the sides.

Step 4

Bake at 325°F (165°C) for 40-45 minutes until set but jiggly. Chill completely, then sprinkle sugar on top and torch until caramelized.
