1 ½ cups red lentils
1 can coconut milk
3 cups vegetable broth
1 can diced tomatoes
1 onion
3 cloves garlic
1 tbsp fresh ginger
2 tbsp curry powder
1 tsp turmeric
1 tsp cumin
3 cups spinach
1 lime

Preparation

Step 1

Sauté diced onion, garlic, and ginger in coconut oil until fragrant.

Step 2

Add curry powder, turmeric, and cumin. Toast spices for 1 minute.

Step 3

Add red lentils, coconut milk, vegetable broth, and diced tomatoes. Simmer for 25 minutes until lentils are very soft.

Step 4

Stir in spinach, season with lime juice and salt. Serve with naan or steamed rice.
